I finally managed to get my hands on those wrappers. They come frozen and obviously need defrosting. Just leave them out a bit? I haven't opened them yet so I guess they come out as a block and need defrosting to separate? If I didn't want to use all 40 sheets at once how and for how long can I store the remainder for?

As chin said 🙂 .. when you first defrost them you can portion them into how ever many you think you will use the next time, stick a bit or parchment paper every 10 or so and then re-freeze and won’t need to defrost them all every time 👍🏼
